     Turkey & Spinach Lasagna Roll-ups

Ingredients
9 lasagna noodles
2 cups fresh spinach, chopped
1 container (15 oz) part-skim ricotta
1 package (8 oz) shredded mozzarella
2 cups prepared pasta sauce
1 lb ground turkey
3 cloves garlic, minced
salt and pepper, to taste
1 tsp onion powder
 
1 tsp garlic powder
1 tsp crushed red pepper, optional

Instructions
Preheat oven to 350. Cook lasagna noodles in boiling salted water for about 8-9 minutes (al dente). While noodles cook, brown turkey with garlic until there are no signs of pink. Place turkey/garlic in a medium size bowl.
In the bowl with the turkey, add ricotta cheese, about 1 1/2 cups of mozzarella, chopped spinach, and seasonings. Mix well and adjust seasoning if needed. Spread a thin layer of sauce on the bottom of a casserole dish.
Lay cooked noodles flat and spread turkey mixture over each. Roll and place in the casserole dish, seam side down. Cover with remaining sauce, place foil over dish, and bake for 20 minutes.
After 20 minutes, sprinkle each roll-up with remaining mozzarella and place under broiler until cheese is melted and bubbly. Serve hot.
Serving Suggestions
Serve with side salad.
