     Smoked Chicken Casserole

Ingredients
2 cups smoked chicken, shredded/chopped
reserved chicken juices -if buying hot or 1 T. butter
1/2 cup onion, diced finely
1/2 cup celery, diced finely
1/2 cup mushroom, diced finely
1 cup frozen peas
1 can cr mushroom soup or cr chicken soup-I use fat free
1/2 cup milk
2 T. mayo
 
1/4 cup sour cream
1/2 cup sharp cheddar cheese
salt, pepper & Billy's Blend to taste
Crushed croutons, corn flakes or chips-whatever you preference for topping
6 oz egg noodles (dried/homemade brand, available @ most grocery stores)

Instructions
Preheat oven to 325 degrees. Cook noodles according to package instructions. Microwave onion, celery and mushrooms in reserved chicken juice or butter for 2 minutes.
Mix all ingredients (except topping) in large bowl, add cooked noodles and mix again. Pour into greased casserole dish and sprinkle with topping.
Bake for 45 minutes or until done.
This is one of the best casseroles I have ever made/tasted. Can be made ahead & refrigerated...increase cooking time.
