     Shrimp Cakes

Ingredients
6 oz Peeled & Deveined Shrimp
2 Tbsp. Egg Beaters
1 Stalk Celery (finely chopped)
2 Baby Sweet Peppers (red, yellow or orange, finely chopped)
1/4 tsp. dried dill
1/8 tsp. white pepper
1/8 tsp. Red Chili Flake
1/4 tsp. Lemon Juice
1/4 tsp. Lemon Juice
 
4 Whole grain crackers (any brand)

Instructions
Spray a skillet with non-stick cooking spray and turn on very low heat. Crush your whole grain crackers to the consistency of bread crumbs. The easiest way is to put them in a Ziploc bag and use a rolling pin, or drinking glass, or your own strength to crush. Next I place the shrimp, celery, and sweet peppers in a mini chopper and pulse on light until finely chopped but not minced. Place chopped ingredients in a bowl and add eggs, spices, and lemon juice. Finally stir in cracker crumbs. Form into patties and fry over medium low heat.
