Spray a skillet with non-stick cooking spray and
turn on very low heat. Crush your whole grain
crackers to the consistency of bread crumbs. The
easiest way is to put them in a Ziploc bag and use
a rolling pin, or drinking glass, or your own
strength to crush. Next I place the shrimp,
celery, and sweet peppers in a mini chopper and
pulse on light until finely chopped but not
minced. Place chopped ingredients in a bowl and
add eggs, spices, and lemon juice. Finally stir
in cracker crumbs. Form into patties and fry over
medium low heat.
