1/2 lb green beans, trimmed, cut into 2 inch lengths
2 cans (5oz each) tuna packed in water, drained&flaked
2T olive oil
1C cherry tomatoes, halved
1/3C pitted black olives
2T fresh lemon juice
2 hard boiled eggs, peeled&sliced
Instructions
Cook pasta & potatoes in a large pot of boiling water until almost tender (7 min). Add green beans. Cook until pasta & potatoes are tender & green beans are crisp-tender (3 min). Drain, reserving 1/2C cooking liquid.
Transfer pasta, potatoes and beans to large bowl. Add tuna, olive oil, tomatoes, olives and lemon juice. Toss to coat, adding enough cooking liquid to make a light sauce. Season to taste with salt & pepper
