     Cranberry Bread

Ingredients
2 Tablespoons grated orange peel
2 Tablespoons shortening plus orange juice to make 3/4 cup. May add boiling water to make 3/4 cup
1 egg
2 cups flour
1 cup sugar
1/2 teaspoon soda
1 1/2 teaspoon baking powder
1/4 teaspoon salt
1 cup chopped nuts (optional)
 
1 cup coarsely chopped fresh cranberries.

Instructions
Beat egg, mix with dry ingredients then add all reamining wet ones. Fold in 1 cup chopped nuts and 1 cup coarsely chopped fresh cranberries (easiest to chopped when frozen. Pour in greased loaf pan. Bake 325 for 1 hour. 1 large or 2 small loaves
Serving Suggestions
May be frozen. Betty use to make them in a large tin can (tomato sauce can). Made nice round loaves
