     Bruschette w/tomato and basil

Ingredients
6-7 tomatoes
2 garlic cloves
1 tbsp olive oil
1 tsp vinegar (balsamic)
6-8 basil leaves, chopped
salt and pepper
1/4 c. olive oil
baquette
 

Instructions
Parboil tomatoes 1 min in boiling water. Drain, remove skin. Cut into quarters and then chop finely. Heat oven to 450°. Slice up bread. Coat with olive oil and toast 5-6 min, until golden. Rub garlic and ½ tsp. oil on each piece. Top with tomatoes just before serving.
