     Layer Dip

Ingredients
4 C. shredded lettuce
4 oz. fat free sour cream
1 C. canned black beans, heated
10 oz. (about 2-1/2 C.) buttenut squash cubes
2 C. cherry tomatoes, chopped
1 C. diced onion
4 oz. roasted red peppers (not in oil), chopped
1 pouch (4 oz.) BOCA ground burger, or other meat substitute
1 oz. reduced fat shredded cheddar cheese
 
3-1/2 t. taco seasoning
Optional- lime juice, salt and peper

Instructions
Combine half of tomatoes with all onion. Season with salt, pepper and lime juice, set aside.
Microwave squash in covered dish with 2 T. water for 6-7 minutes. With fork or masher, mash to a pulp. Mix in 1/2 t. of taco seasoning and set aside.
In sprayed skillet, combine meat, tomatoes and remaining 2 t. taco seasoning and cook until crumbles are defrosted and mixture is thoroughly heated.
In large dish, layer in order - lettuce, squash mixture, tomato/onion mix, sour cream, black beans, meat mixture, cheese, red peppers.
