     Pork Tenderloin w/ Apple Dijon Pan Sauce

Ingredients Black pepper 1 garlic cloves Fresh rosemary 1 tbsp olive oil ¼ c. cider vinegar 2 tbsp Dijon mustard 2 c. apple cider 2 tbsp butter Pork Tenderloin
Trim off silver skin. Cover meat with black pepper, 3 cloves of garlic and rosemary – bruise (hit w/ back of knife). Throw in a bag, add 1 tbsp olive oil and massage into pork. Refrigerate for 4-12 hours. Heat oven to 375, remove marinade. Add salt. Sear pork in 1 tbsp oil in very hot pan on each side for 3-4 minutes. Roast pork. 20 minute (or 30 min) Make a pan sauce- add cider vinegar, dijon mustard, apple cider to a pan. Cook until reduced to ¾’s of original liquid. Turn heat off. Add butter and whisk. Add fresh rosemary. Slice meat and add the sauce.
