     Spinach Lasagna

Ingredients 12-15 lasagna noodles 1/3 c. olive oil 1 lg onion, diced 2 cloves garlic, minced 8 oz. can tomato paste 24 oz. cottage cheese or ricotta Italian seasoning (to taste) 8 oz mushrooms, sliced 1 lb spinach, chopped 14 oz can crushed Italian tomatoes 1 ½ lb cheese, grated 1 egg
Cook noodles, drain and rinse in cold water. Heat oil in large frying pan over medium heat. Add onion, garlic and mushrooms. Saute until well oiled. Add spinach, stir frequently until well cooked. Add tomatoes and liquid. Add tomato paste and seasoning. Stir until well mixed. Butter 9x13 dish. Spead ¼ sauce in dish. Arrange 1/3 noodles over, dot with cottage cheese mixture (cottage cheese, 1 c. cheese, and seasoning and 1 egg). Repeat two more times. Spread remaining sauce on top. Add remaining cheese. Bake 350° for 40- 50 min. Remove and let sit for 10 minutes to settle.
