     Chicken and Wild Rice Soup

Ingredients 1 qts. Chicken broth 1-2 cups chicken 5 stalk celery 3 carrots, chopped 1 yellow onion, chopped 3 tbsp parsley 1 tsp thyme 1 cup wild rice 1 tbsp yogurt or apple cider vinegar
Soak rice in warm water and cider/yogurt for 8 hours. Heat oil. Add veggies and cook. Add chicken and herbs and cool 2 more minutes. Add broth. Drain and rinse rice. Add rice to soup. Cook until rice is tender. Season with salt and pepper.
