     Spicy Spinach & Artichoke Dip

Ingredients
1/2 cup butter
1 medium onion chopped
2 -10oz. pkgs. frozen spinach thawed & drained
1 - 14oz. can artichoke hearts drained & chopped
1 - 8oz. cream cheese
1 - 8oz. sour cream
1 cup shredded Monterey Jack
1 cup grated parmesan cheese
2 T Tabasco sauce
 
salt to taste
optional 1 can water chesnuts

Instructions
Melt butter in a large saucepan or skillet over medium heat. Add onion and cook until soft about 5 minutes.
Stir in spinach, artichokes, cream cheese, sour cream, monterey jack cheese, parmesan cheese, water chesnuts, tabasco and salt until well blended.(reserve some jack and parmesan cheese to put on top of the casserole before baking)
Pour mixture into a casserole dish and top with monterey jack and parmesan cheese.
Bake at 350 until cheese starts to brown, about 10 minutes. Serve with corn chips or crackers.
