     Carrot Soufflé

Ingredients
2 lbs. carrots (diced)
1/2 C. Butter
2 eggs, beaten
3 T. Flour w
3/4 C. Sugar
1/8 t. Cinnamon
1 t. Baking powder
 

Instructions
Cook carrots in boiling salted water until tender, about 20-25 minutes;drain we'll and mash. Combine mashed carrots with remaining ingredients; pour into buttered, 2 quart soufflé dish. Bake at 400 degrees for 15 minutes. Reduce heat to 350 degrees and bake 45 minutes longer
