     Cowboy Caviar

Ingredients
1 can shoe peg corn, drained
1 can black-eyed peas, drained or 1 can of black beans
1 avocado, chopped
5-8 roma tomato, chopped
2/3 c cilantro, chopped
2/3 c green onions, chopped
¼ c olive oil
¼ c red wine vinegar
2 garlic cloves, minced
 
¾ tsp salt (sea salt preferred)
1/8 tsp pepper
1 tsp cumin

Instructions
Mix all ingredients together and refrigerate for 1-2 hours to let the ingredients ‘meld’.
Serving Suggestions
Serve with scoop-style tortilla chips.
