Warm olive oil in a skillet over medium heat. Add onion and cook until softened, add garlic and cook 1 minute more. Scrape onions and garlic into crockpot. Add beans, ham/pork, broth, 1 C water and cook on low heat for 4-5 hours.
Remove ham/pork and shred if necessary. Return to soup, season and serve.

Add 8 C of baby spinach at end of cooking and heat until wilted (2 minutes).
