     Savannah Red Rice

Ingredients
5 slices bacon cooked crisp and crumbled (optional)
1 large onion, chopped
1/2 cup celery, chopped
1/2 cup green pepper, chopped
1 16 oz can chopped undrained tomatoes
1/2 cup water
1/2 tsp salt
1/4 tsp pepper
 
1/4 tsp cayenne
dash of tabasco

Instructions
Saute onion, celery and green pepper in bacon grease or if omitting the bacon, in olive oil. Mix with other ingredients. Bake covered at 350 for 25 minutes or until rice is tender, stir after 15 minutes. If using brown rice, you will need to add extra water and bake longer.
