Clean all of your vegetables thoroughly. Use a vegetable peeler and run it lengthwise across the vegetables to create long ribbons.
In a saute pan over medium high heat, heat oil and garlic until garlic is translucent. Add the carrot ribbons first and saute for 1-2 minutes. Add the remaining ribbons and saute to desired tenderness. Season to taste.
Top the ribbons with your favorite pasta sauce, cheese, or fresh lemon juice.
Serve hot with pesto or marinara...make more for a great entree
