1 lb. skinless, boneless chicken breasts, shredded, about 3 C.
1/2 C. Snow peas, cut in half lengthwise on a diagonal
1/2 C. Sweet red pepper diced
1/2 C carrots carrot, shredded
1/4 C. Scallions sliced
4 pieces bibb lettuce
Instructions
In a large bowl whisk together mayonnaise, soy sauce and
ginger until blended. Add chicken, carrots and scallions; toss
to mixed.
Immediately serve salad in lettuce or cover and serve and
refrigerate up to 1 day. Yields about 1 1/4c. Chicken salad
and 1 lettuce per serving.
