2 pounds red potatoes, cut into 1/3 inch pieces
|

2 Tablespoons extra virgin olive oil
|

1 Tablespoon dried rosemary chopped
|
|
salt
|
|
3/4 Cup Mayonnaise
|
|
Grated Lemon Peel
|
|
1/2 juice of 1 lemon
|
|
Pepper
|

|
|

|

Instructions |

|
Preheat oven 450
In a medium bowl toss potatoes, oil, rosemary and salt
Then arrange in a single layer on a baking sheet
|

Roast the potatoes for 30 minutes, rotating pan after 15 minutes. Then flip potatoes and cook for 10 more minutes, sprinkle with salt
|
|
|
Meanwhile, mix Mayo, Lemon juice and peel- season with salt and pepper. Serve along side the potatoes.
