     Nutty Fish and Roasted Sweet potatoes

Ingredients
6- 3-4 oz white fish fillets (tilapia, cod, orange roughy or flounder)
Non stick cooking spray
2 T. Water
2 T. packed brown sugar
1/4 t. Salt
2 Large sweet potatoes peeled and cut into1/4 inch thick slices
1/2 C. Flour
2 eggs
2 T. Water
 
3/4 C. Finely chopped pecans
3 T. Ground flaxseeds
2 T. Packed brown sugar1/4 t. Salt

Instructions
Thaw fish if frozen. Rinse fish; pat dry with paper towel. Measure thickness of fillets;set aside. Preheat oven to 425 degrees. Coat a 3 quart rectangular or oval baking dish. D. Larger baking sheet with nonstick cooking spray; set aside.
In a large bowl, combine water, 2 T. Brown sugar and 1/4 t. salt; add sweet potatoes tossing to coat evenly. Layer sweet potatoes in prepared baking dish. Bake. Uncovered, about 30 minutes or until tender. Meanwhile, place flour in a shallow bowl; in another shallow bowl,combine egg and water, beat with a fork. In a third shallow bowl, combine pecans, flaxseeds, 2 T. Brown sugar and 1/4 t. Salt.
Dip each fillet in flour, turning to coat both sides; shaking off excess. Dip in egg mixture; then coat generously with pecan mixture. Place fish fillet on prepared baking sheet. Bake in 450 degrees oven until flakes easily when tested with a fork. Allow 4-5 minutes per 1/2 inch thickness
