     Vegan Irish Stew

Ingredients
3 cups water
2 1/2 cups vegtable broth
1 lb un-peeled potatoes
8 oz of chickpeas
3 large peeled carrots
1 medium onion
1 stalk celery
2/3 cup of barley
2 Tbls worcestershire sauce
 
1 tsp fresh thyme
1 tsp fresh rosemary
1/2 tsp salt
back pepper to taste

Instructions
Cut all veggies into large stew like chunks, including potatoes. In a large pot combine water, vegetable broth, barley, onions, and salt. Bring to a boil and cook at medium heat for about 20 minutes.
Add in the potatoes and cook for another 10 minutes. Next add the carrots, chickpeas, celery, worcestershire sauce, and all spices. Cook for another 20 minutes on a low setting.
Note- I use more carrots, celery, and potatoes than what the recipe calls for.
Serving Suggestions
Serve with Irish Soda Bread
