     3 cheese spinach Lasagna

Ingredients
2 T. Olive Oil
2 Shallots, minced
Leaves from 1 bunch fresh Spinach,washed and finely. Chopped
Parmesan Sauce(recipe in directions)
6 Oz. lasagna noodles, cooked according to pkg. directions
3 lb. reduced fat ricotta cheese
1 can(16 oz.) sliced tomatoes
1 lb. reduced fat mozzarella or provolone cheese, sliced
1 C. Parsley minced
 
PARMESAN SAUCE-
4 T. Butter
3 T. Flour
2 C. Milk
1 t. Salt
1/4 t. Ground white pepper
1/8 t.ground nutmeg
1/2 C. Freshly grated Parmesan cheese

Instructions
Spray bottom ad sides of 8x12 baking dish. Preheat oven to 350 degrees. In a skillet over low heat, heat the olive oil. Saute the shallots and spinach together until spinach wilts (2-4 min.)
PREPARE PARMESAN SAUCE- In a 2 quart sauce pan over low heat, melt butter. Whisk in flour and cook golden brown (4-5 min.). Slowly add milk and cook until thickened. Add salt, pepper and Parmesan .
Spread 1/2 C. Parmesan Sauce over bottom of baking dish. Cover sauce with cooked noodles. 1st LAYER- spread 1 lb. ricotta cheese over noodles. Cover with half of tomatoes, 1/2 C.parmesan sauce, more noodles. 2nd LAYER- spread 1 c, ricotta cheese over noodles, cover with all of the spinach mixture, half of the mozzarella cheese, another 1/2 C. Parmesan sauce and more noodles. FINAL LAYER- spread on remaining ricotta, tomatoes, mozzarella, 1/2 C. Parmesan sauce, and any remaining noodles. Top with remaining Parmesan sauce.
