Wildtree Red Quinoa Salad w/Spiced Citrus Dressing

Ingredients
2 c red quinoa
4 c water
3T Wildtree Roasted Garlic Grapeseed Oil or Olive Oil
2T Wildtree Rockin Moroccan Herb Blend
2c finely chopped curly kale
3 c shredded carrot
2 scallions, chopped fine
1/2 c dried cherries, chopped
1/4 c cilantro leaves, chopped fine
1/4 c Italian parsley, chopped fine
1/4 c apple cider vinegar
3T agave or maple syrup
1/4 c orange juice
1 1/2 tsp. salt
1/2 tsp. pepper
1/2 c toasted pepitas, pine nuts, or chopped pistachios
Instructions
In medium dutch oven, combine 1T. Wildtree Roasted Garlic grapeseed oil, water, quinoa, 1 tsp. salt and 1T Wildtree Moroccan herb blend. Stir to combine, cover and bring to boil. Reduce heat to low and simmer, covered, until liquid is absorbed, about 25 - 30 min. Transfer to large bowl and refrigerate for several hours.
Once quinoa has chilled, fluff with fork. In small bowl, combine 2T Wildtree Roasted Grapeseed Oil, 1T Wildtree Moroccan herb blend, 1/2 tsp. salt, pepper, vinegar, syrup, and orange juice. Whisk to form vinaigrette. Pour over quinoa.
Add kale, shredded carrot, scallions, dried cherries, parsley and cilantro. Toss well to fully combine. Top with toasted pepitas/pine nuts/chopped pistachios.
