Heat 1 inch of water in bottom half of double
broiler over medium-low heat. Melt chocolate chips
in top half, slowly for 5-10 minutes. Set aside to
gool

Place heavy cream in well-chilled bowl and whisk
until it starts to thicken. Sprinkle sugar over
cream, add vanilla. Continue to whisk until stiff
peaks form and set aside (Divide in half- half of
whipped cream is for mousse, half for piping).
Whisk egg whites until soft peaks form, add sugar,
continue to whisk until stiff peaks appear. Set
aside.

Take half of the halved whipped cream, add to
chocolate QUICKLY, VIGOROUSLY, THOROUGHLY! Add
whipped egg white mixture to mousse, folding gently
until mixed. Add the second half of whipped cream,
folding in thoroughly.

|
Pipe mousse into tumbler cups. Top with piping from
remaining whipped cream.
