     Vegetable Quiche Cups To Go

Ingredients
1 (10 oz) pkg. frozen chopped spinach
3/4 C. Liquid egg substitute
3/4 C Shredded reduced-fat cheese
1/4 C. diced green peppers
1/4 C diced onions
3 drops hot-pepper sauce
 

Instructions
Microwave the spinach for 2 .5 minutes on high. Drain the excess liquid.
Line 1 12-cup muffin pan with foil baking cups. Spray cups with cooking spray.
Combine the egg substitute, cheese, peppers, onions and spinach in a bowl. Mix well. Divide evenly among the cups. Bake at 350 for 20 minutes, until a knife inserted in the center comes out clean
Can be frozen and reheated in microwave. 77 Calories; 9g protein; 3g carbs; 3g fat; 2g saturated fat; 160mg sodium; 10mg cholesterol; 2g fiber
