     Almond Cookies twice baked

Ingredients
2 c flour
2/3 c sugar
1 1/2 t baking powder
1/4 t salt
1 T grated lemon zest
5 T unsalted butter
2 eggs
1/2 t vanilla
1 t almond extract
 
1 c whole almonds

Instructions
Process- flour, sugar b.p., salt and zest. Add butter and pulse til resembles coarse meal. Add eggs, vanilla and almond ext. Pulse til blended and pulse with almonds a bit.
Transfer to lightly floured board and form 2 loaves about 10 inches by 1 1/2. Bake until they begin to turn golden about 25 min at 350. remove cookies and raise temp to 400. Cut into 18 equal slices. Turn on side and bake for 7 min. Turn oven off and turn cookies over. Return to oven until golden and crisp 10-15 min. (oven is off)
