     Chocolate Banana Muffins

3 very ripe bananas
1/2 cup vegetable oil
2 eggs
1/2 c. packed brown sugar
1/3 c. Quaker oat bran, optional
11/4 to 11/2 c. flour
3 tbsp. cocoa powder
1 tsp. baking soda
pinch salt

Preheat oven to 400F and spray muffin tin with nonstick cooking spray. Mash the bananas. Beat in oil, eggs and sugar. Whisk in the oat bran. In separate bowl, whisk together the flour, cocoa, baking soda and salt, using the lesser amount of flour if you've added the oat bran. Add this mixture to the banana mixture and stir gently until combined. Spoon into muffin cups. Bake for 15-20 mins.
TO FREEZE- let cool completely. Wrap individually in plastic wrap, place in freezer bag.
TO THAW- Let thaw at room temperature. Can be popped in oven/toaster oven for a few minutes.
