Roast spare ribs at 350 until browned and fat has dripped off.
Saute ribs, garlic and olive oil in dutch oven. When garlic is fragrant
add tomato ingredients and peeled whole onion and whole carrots.
Simmer sauce for 2 hrs. Remove ribs, onion and carrots before
serving. Salt and pepper to taste.
