Whisk 1 1/2 c. flour, 3 T. sugar, 1 1/2 t. baking powder, 1/2 t. salt and 1/4 t. baking soda in a med. bowl.
Whisk 1 c. plus 2 T. milk, 4 T. melted butter and 1 egg in a seperate bowl; fold into the flour mixture until just combinded (it's ok if there are lumps).
Brush a large nonstick skillet or griddle with butter and heat over medium-low heat. Add 1/4 cupfuls of the batter and cook until bubbly on top and golden on the bottom, about 4 mins. Flip and cook until golden on the bottom, about 2 more mins. (Makes 6 to 8 pancakes).
