     MARINARA SAUCE

Ingredients
˝ c. olive oil
1 small onion, chopped
4-6 basil leaves
2 cloves garlic, minced
Sea salt & black pepper
1 carrot, chopped
2-32 oz. cans crushed tomatoes
2 dried bay leaves
1 stalk celery, chopped
 
4 T. butter (optional)

Instructions
In a large pot heat oil over medium heat. Add onion & garlic and sauté until soft and translucent, about two minutes. Add celery & carrots, season with salt & pepper. Sauté until all the vegetables are soft, about 5 min. Add crushed tomatoes, basil, & bay leaves. Simmer, covered, on low heat for 1 hr. until sauce is thick. Remove bay leaves and check for seasoning. If sauce tastes acidic, add unsalted butter, 1 T. at a time to round out flavors. Add ˝ sauce into blender & blend until smooth. Continue with remaining sauce. Tip- May freeze up to 6 months.
