     Irish Soda Bread

Ingredients
2 lb. wheat/whole grain flour
4 heaped tablespoons brown sugar
4 handfuls of ground flaxseed meal
3 handfuls of sunflower seeds
2 handfuls of sesame seeds
4 pinches of salt
4 heaped teaspoons of baking/bread soda
1 lb. of self-raising white flour
1 liter (about 1 quart) of buttermilk.

Instructions
Recipe from Suzanne Hyde Broderick, Vanessa Phillips’ best friend. Suzanne was an expat on assignment in Ireland, met her husband and the rest is history. She now resides in a small village in Guileen overlooking the sea with twins Kayla, Tom and her husband Austin!
In a large mixing bowl, stir together wheat flour, brown sugar, flaxseed meal, sunflower seeds, sesame seeds and salt. Using a sieve, add- baking/bread soda & self-raising white flour (lifting as you go to get plenty of air into it) Stir in buttermilk.
Oil 3 baking tins with sunflower oil and fill with wet mixture.
Sprinkle tops with pumpkin seeds and sesame seeds, then lightly brush with milk. Bake for 50 minutes at 355F.
