1 (15 oz.) can black beans, or black-eyes peas, drained
3 green onions, finely chopped
2 cloves garlic, finely chopped
1 large tomato, seeded & chopped
1 medium green pepper, seeded & diced
1 jalapeno pepper, seeded & minced
1 T. fresh parsley, chopped (optional)
½ c. Kraft Zesty Italian dressing
¼ c. onion, chopped
¼ c. onion, chopped
Instructions
Combine corn, peas, onions, garlic, tomato, green pepper, jalapeno pepper, parsley and onion in a medium bowl. Pour salad dressing over mixture and toss gently. Cover and chill thoroughly. Toss again before serving. Garnish, if desired. Serve with tortilla scoops and Frito Scoops, or other chips, as desired. Makes 52 (1/8 cup) servings at about 20 calories per serving.
