1 large garlic clove, smashed to a paste (I use 1/2 tsp. minced jarred)
3 to 4 TBS. lime juice (I try to use fresh, but sometimes use the kind in the fake plastic lime)
1 jalapeno (or to taste), seeded and minced (wear gloves!)
2 tomatoes, seeded and chopped fine
1 small red onion, chopped fine
1/4 c. cilantro leaves, finely chopped
Salt and freshly ground pepper
Instructions
Halve and pit avocados and scoop flesh into a large bowl. Mash
avocado with a fork or potato masher and stir in remaining
ingredients, combining well. Chill, covered with plastic wrap, for at
least one hour and up to 1 day. Stir guacamole well and serve with
tortilla chips.
