Boil the cod roe until well done (keep the water),
take the film off and set aside. Melt some butter
on a low heat, add some parsley, add crushed roe
to the pan. Add a few spoons of water from boiling
the roe, add a pinch of salt, black pepper and mix
it well together. Put it in the fridge to cool
down and stick together. (If it didn't stick well
enough add some more melted butter and leave in
the fridge for half an hour.) Serve on some good
bread or crackers with a leaf of parsley on top.
Perfect for parties or for lunch.
The proportions are varied and depends on how much
roe you have.
