     Macaroni and Cheese

Ingredients
2 1/2 cups uncooked elbow macaroni
1/4 cup margarine or butter
1/2 tsp salt
1/4 tsp pepper
1/4 cup all-purpose flour
1 3/4 cups milk
2 cups grated cheddar cheese
 

Instructions
Fill a large pot with 2 quarts water. Bring water to a boil, add macaroni and cook uncovered for 8 minutes or until tender-firm. Drain cooked macaroni in a colander and put back into the large pot.
In a small saucepan, melt margarine, salt and pepper over low heat. Blend in flour. Cook over low heat, stirring constantly until mixture is smooth and bubbly; remove from heat. Stir in milk. Heat to boiling over medium heat, stirring constantly. Boil and stir 1 minute; remove from heat. Sitr in cheese until melted
Add cheese sauce to cooked macaroni in large pot and mix gently to thoroughly coat the macaroni with the cheese sauce.
You may place the macaroni and cheese in an ungreased casserole dish and cook uncovered in a 375 degree oven for 30 minutes. This will make the mixture less saucy. (You can also spread a coat of seasoned breadcrumbs on top of the macaroni before baking.)
