     Truffled Egg Salad

Ingredients
1 dozen eggs, hardboiled and peeled
1/2 cup mayonnaise
1/4 to 1/2 cup sour cream
3 tablespoons truffle oil
1/2 teaspoon truffle salt, or to taste
2 tablespoons minced chives
 

Instructions
Put the eggs in a large bowl and mash with a potato masher until coarsely chopped. Add the mayonnaise, 1/4 cup of the sour cream and the truffle oil. Mix until evenly blended. If it's not creamy enough, add more sour cream. Add the truffle salt and chives and mix briefly
