     Honey Glazed Carrots

Ingredients
1 pound carrots
2 tablespoons butter
2 tablespoons honey
1 tablespoon lemon juice
salt and pepper
1/4 cup flat leaf parsley, chopped
 

Instructions
In a medium saucepan, bring water to a boil. Add 2 teaspoons salt and the carrots. Cook until tender, about 7 minutes. Drain the carrots. Put them back in the pan with the butter, honey and lemon juice. Cook until a glaze coats the carrots, about 5 minutes. Season with salt and pepper to taste and garnish with parsley.
