     Southwestern Chopped Salad with Cilantro Dressing

Ingredients
Romaine lettuce (head or bagged)
15 oz. can of black beans (drained and rinsed)
1 large orange/red/green bell pepper
1 pint cherry tomatoes
2 cups of corn (canned or frozen)
5 green onions
3-4 Tbsp lime juice
1/2 cup plain Greek yogurt
1 cup loosely packed cilantro, stems removed and roughly chopped
 
2 garlic cloves
1/4 cup olive oil
1 1/2 tsp. white vinegar
1/8 tsp. salt

Instructions
For the dressing- Puree all ingredients in a blender or food processor until smooth. Taste and adjust seasonings if necessary. 1 cup loosely packed cilantro, stems removed and roughly chopped 1/2 cup plain Greek yogurt 3-4 Tbsp. fresh lime juice (about 1 lime) 2 garlic cloves 1/4 cup olive oil 1 1/2 tsp. white vinegar 1/8 tsp. salt (or more to taste)
