Add oil to soup pan and heat. Add onion and carrot and cook
until beginning to soften. Add ground sausage and cook until
done. Add minced garlic and cook one to two minutes more.
Add the tomatoes, water, bouillon, thyme, bay leaf, and beans.
Cover and simmer for one hour.
Add the pasta and cook, uncovered, until the pasta is tender.
Check the seasoning and add salt and pepper or bouillon to
taste. Serve with Parmesan cheese on top.
Can also use beef bouillon if preferred.
