     Sticky Date Pudding muffins

Ingredients
1 1/2 cups pitted dates ( chopped)
1 1/2 cups water
3/4 teaspoon bicarbonate of soda
45g butter
150g castor sugar
2 eggs
125g self-raising flour
Sauce
3/4 cup brown sugar, lightly packed
 
1 cup cream
100g butter

Instructions
Preheat oven to 180
Put dates and water in saucepan and bring to boil. Reduce heat and simmer 2 minutes. Remove from heat, add bicarbonate of soda.
Cream butter and sugar. Beat in the egg. Mix in flour and date mixture. Bake 20 minutes.
Sauce. Combine all ingredients in saucepan, stir until sugar and butter have dissolved. Cook 3-5 minutes.
