Saute` red onion and garlic in olive oil in a large saucepan/frying pan.
At same time, cook couscous.
Add chicken pieces, some cinnamon, and a squeeze of lemon to onion and garlic. Continue to saute` until chicken is almost cooked.
Add olives, tomato, apricot, more cinnamon, more lemon, and dash salt and pepper to chicken. Cover and cook.
After a few minutes, add couscous; saute` mix until chicken is completely cooked and apricots aren't as hard.
