     Enchiladas

Ingredients
2 lbs. ground beef
1 small onion chopped
1 pkg. taco seasoning
3/4 cup water
10 medium flour tortillas
40 oz. red mild enchilada souce
4 cups sharp cheddar cheese, shredded
4 oz. green chiles
sliced black olives
 

Instructions
Brown meat and onion in skillet and drain. Add taco seasoning and water to beef and cook until water has evaporated. Cover bottom of 9 by 13 baking dish with some enchilada sauce. Warm tortillas in microwave by placing 5 at a time between 2 wet paper towels for 45 seconds. Dip both sides of one tortilla in enchilada sauce. Spoon meat into tortilla, sprinkle with cheese, roll up and place seam side down in baking dish. Place rolled-up enchiladas close together and pour remaining sauce over them. Top with chiles and any remaining cheese. Bake at 350 degrees for 20-15 minutes or until cheese is melted. Top with olives
