1 (10 oz) can diced tomatoes and green chiles; drained
salt and pepper
Instructions
Bring chicken broth to boil in large saucepan; stir in grits.
Cover, reduce heat, and simmer for 20 minutes.
Stir into cooked grits 3/4 cup cheddar cheese and all pepper jack cheese.
Melt butter in skillet; add onion, green pepper and garlic.
Saute until tender.
Stir together onion mixture, grits, shrimp, tomatoes and chiles. Pour into greased 2 quart baking dish. Sprinkle remaining cheese on top.
Bake 350 degrees for 30 to 45 minutes.
