1 cup roughly chopped marinated artichokes in oil, with 1.5 Tablespoons oil
2 packages garlic and herb cheese (Boursin or Alouette)
2 cloves garlic, whole and peeled
1/4 cup water
Juice and zest of 1 lemon
Salt
1/2 teaspoon crushed red pepper
Black Pepper
8 oz spaghetti
Grated Parmesan
Instructions
Preheat oven to 400. Place artichokes, cheeses, garlic, water,
lemon juice and zest, salt, and red pepper in a 13 x 9 baking dish.
Bake for 30 minutes.
Meanwhile, cook spaghetti to al dente. Reserve 1 cup of pasta
water
After 30 minutes, remove the artichoke mixture from the oven.
Smash the garlic cloves with a fork, stir everything well. Add
reserved pasta water and stir until everything comes together. Add
pasta, tossing until combined. Taste and adjust seasoning, adding
salt and pepper to taste.
Serve, topped with Parmesan.
