     Sour Cream Banana Bars

Ingredients
1 1/2 cups sugar
1 cup sour cream
1/2 cup (1 stick) butter, softened
2 large eggs
1 1/2 cups mashed bananas (3 to 4 very ripe medium-sized bananas)
2 teaspoons vanilla
2 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
 
1/2 to 1 cup chopped nuts

Instructions
1.Preheat your oven to 375 degrees. Lightly grease and flour a 10.5x15.5-inch jelly roll pan. 1.In a large mixing bowl beat the sugar, sour cream, butter, and eggs with an electric mixer on medium speed until well blended, about 1 to 2 minutes. 2.Beat in the bananas and vanilla on low speed until blended, another minute or so. 3.Beat in the flour, salt, and baking soda on medium speed for 1 minute more. 4.Spread the batter evenly into the prepared baking pan. 5.Bake for 20 to 25 minutes or until a toothpick inserted in the center comes out clean and the bars are golden brown. 6.Remove from the oven and place the pan on a wire rack to cool completely. 7.Once your banana bars have cooled you can sprinkle them with confectioners sugar or spread them with browned butter frosting. 8.Cut into desired size bars - small, medium or super-sized - it's your choice. This recipe makes one 10.5 x 15.5-inch jelly roll pan of Sour Cream Banana Cookie Bars.
I frost these with cream cheese frosting- 1 8 ounce package cream cheese 1/2 cup butter1 t vanilla 3 1/2 - 4 cups powdered sugar Cream butter and cream cheese, add vanilla. Slowly mix in powdered sugar and beat until well mixed.
