     Moist, Delicious, Flavorful Bulgur Pilaf

Preptime   40 minutes total

2 Tbsp Enova, canola, or olive oil
2 small red onions (or 1 medium) , chopped
1 cup chopped fresh mushrooms
1 cup fine bulgur
1/4 tsp garlic salt, plus extra to taste
1/2 tsp dried dill weed
1/4 tsp dried oregano
1/4 tsp black pepper
2 cups vegetable broth
fat free plain yogurt (optional)
fat free shredded cheddar cheese (optional)

Heat oil in large skillet.
Add onion and mushrooms. Stir constantly until vegetables are tender.
Add bulgur and cook until golden.
Add seasonings and broth. Sprinkle with additional garlic salt if desired. Stir well. Cover and bring to a boil. Reduce heat and simmer 15 minutes. (Can let sit in pan on burner as it then cools down, to give bottom a brownish, crispy texture.)
Serving Suggestions
Really good topped with plain, FF yogurt and shredded FF cheddar cheese
