10 fresh basil leaves, rolled into a log and sliced
1 cup feta, crumbled
Salt and Pepper
Instructions
Boil water. Add quinoa and stir. When it returns to a boil, cover and
let simmer on low heat until cooked — about 15 minutes.
While the quinoa is cooking, make sure the tomatoes, olives,
oregano, parsley, and basil are prepped, cut, and ready to go.
Combine the first four ingredients, but leave the basil out to the
side.
When the quinoa is cooked, add the oil, tomatoes, and herbs
(except the basil!). Stir to combine, and season with salt and pepper
as needed.
Top with basil and and feta, and serve as a side dish to any chicken
or fish dish!
