knob of fresh ginger, peeled and thinly sliced to make 1/2 cup, more or less to taste
3/4 cup fresh lime juice
3/4 cup sugar
ginger beer (Fentimen's is best)
vodka
lime zest
ice
Instructions
To make ginger-lime syrup- put ginger, lime juice, and sugar in a small saucepan. Bring to a boil and boil for 2 minutes. Put mixture into a blender and puree for 20 or 30 seconds. Strain through a fine sieve or filter through muslin, pressing sediment with back of a spoon to get all of the ginger juice out.
Cocktail recipe- 1 shot ginger lime syrup, 1 to 1 1/2 shots vodka, 3 shots ginger beer. Pour over a copper cup full of ice cubes and top with lime zest for a traditional mule presentation.
An alternate version is made with gin with some mint leaves muddled into it- called a gin mule.
