     Sauteed Spinach with Bacon and Mushrooms

Ingredients
1 lb Baby Spinach (organic)
12oz Cremini Mushrooms (sliced)
2 Shallots
3 Slices Bacon (baked and crumbled)
2 tsp White Wine Vinegar
Sea Salt
Black Pepper
 

Instructions
Heat skillet and allow bacon grease to melt. Saute sallotts with salt and pepper. Next, add the mushrooms and saute them as well.
Add baby spinach into the skillet and season with vinegar, salt and pepper as the spinach wilts.
Plate it up and garnish with bacon bits.
