Cut the zucchini in half, scoop out the insides, leaving 1/4 inch shells, brush with 2 T olive oil.
Chop pulp...add to a skillet with the rest of the oil, red onion. cook until tender, add the garlic and cook 1 minutes longer. Stir in the breadcrumbs and saute about 2 minutes.
Remove from heat, stir in the cheese, scoop into shells. Put a dash of olive oil in the bottom of an aluminum pan, add stuff zucchini, cover with aluminum foil, toss on grill or in oven for about 7-8 minutes until shell is tender.
