     TUSCAN SOUP

Ingredients
6 c. chicken broth
2 T. dried minced onion
½ lb. ground Italian sausage
3 large potatoes, cubed
4 c. fresh spinach, washed, chopped
¼ c. evaporated milk
¼ tsp. black pepper
 

Instructions
Crumble sausage into frying pan, add minced onion, cook on medium heat until meat is no longer pink. Drain. Add sausage and onions to large pot with broth and potatoes, boil until potatoes are cooked (don't over cook them). Add spinach, continue boiling until spinach is lightly cooked. Remove soup from heat, stir in evaporated milk and pepper, serve warm.
